Penelope Havana

Penelope Bourbon Havana – A Tall & Sweet Journey Through Rum & Maple Penelope Havana is a bold limited-edition expression from the Cooper Series, designed to transport your senses to the warmth and rhythm of Old Havana. It begins with Penelope’s signature four-grain mash bill of 74% corn, 16% wheat, 7% rye, and 3% malted barley. After initial aging, Havana is double finished—twelve months in Caribbean rum casks to infuse tropical sweetness and molasses depth, followed by one month in maple syrup barrels that once held Penelope bourbon, creating a layered and dessert-like complexity. Tasting Notes • Aroma: Molasses, banana bread and rich maple. • Palate: Caramel corn, toasted oak, candied pecans and maple syrup richness. • Finish: Lingering vanilla, brown sugar and subtle mellow spice.
